These birds are not raised for human consumption. Instead, they’ve been part of a scientific collaboration with Kyoto Prefectural University in Japan, where researchers led by President Dr. Yasuhiro Tsukamoto have been extracting antibodies from ostrich eggs to develop new treatments and interventions against avian flu — the very disease the CFIA claims justifies their destruction.

But such natural, low-cost progress doesn’t fit neatly alongside the $590 million grant Moderna recently received to develop mRNA vaccines for bird flu.
